1 cup quinoa
2 cups vegetable broth
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
100g fresh mushrooms, sliced
10g organic mushroom powder
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
1.Rinse the quinoa under cold water.
2.In a medium pot, bring the vegetable broth to a boil.
3.Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed.
4.In a large skillet, heat the olive oil over medium heat.
5.Add the onion and garlic, and sauté until fragrant and translucent.
6.Add the fresh mushrooms and cook until they release their moisture and begin to brown.
7.Stir in the cooked quinoa and organic mushroom powder, and mix well.
8.Season with salt and pepper to taste.
9.Garnish with fresh parsley before serving.
