1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
100g fresh mushrooms, sliced
10g organic mushroom powder
4 cups vegetable broth
1 can (400g) diced tomatoes
1 teaspoon dried thyme
1 bay leaf
Salt and pepper to taste
Instructions:
1.In a large pot, heat the olive oil over medium heat.
2.Add the onion and garlic, and sauté until they become soft.
3.Add the carrots, celery, and fresh mushrooms, and cook for about 5 minutes.
4.Stir in the organic mushroom powder.
5.Add the vegetable broth, diced tomatoes, dried thyme, and bay leaf.
6.Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes or until the vegetables are tender.
7.Remove the bay leaf and season with salt and pepper to taste.
8.Serve hot with your favorite bread.
